Vegan BLT

This isn’t really a “recipe”.  It’s just a sandwich.  But sometimes we get caught up in thinking that vegetarian eating is hard and involves lots of cooking.

Vegan eating does generally involve more cooking – as less vegan options are available outside – but here is a fast sandwich I make about once a week.  It literally takes 5 minutes to make and you could even pack it in a brown bag for work.

3 slices pre-seasoned tofu strips

2 slices whole grain bread

non-stick pan or pan sprayed or wiped with a drop of oil

vegan mayo, mustard, lettuce and tomato (I used arugula here actually)

Those tofu slices are already cooked and you can eat them straight from the package.  But I personally like to heat them up in the pan a bit.  Enjoy!

Now, a bit of business/funness:

There is an active Vegetarian Association in Jerusalem.  Maybe there is even one in Tel Aviv, although I have not heard of it.  But I am not in either of those places.  I was wondering if there would be sufficient interest in having a Vegetarian/Vegan Potluck Meet-Up Group here in the Sharon Region?

I have a couple of films, like Food Inc and The Future of Food, so we could even have film screenings if we wanted to do that.

Or it could just be social and a chance to share good food.

You wouldn’t have to be a vegan or vegetarian to join.  Just someone who interested in the food or the lifestyle and would like to learn more.  The group would of course need to be open to Hebrew speakers too (and I will personally have to suck it up and speak Hebrew for a change).
