On with the Fusion Confusion!
Seitan Teriyaki Fajitas were a strange conglomeration of ingredients I had on hand which turned into the best lunch of the month!
Seitan Teriyaki Fajitas
(serves 2)
1 package Seitan Cubes in Teriyaki sauce (Teva Deli Brand, Israelis)
1 roasted red pepper (I had one I had already flamed-roasted and peeled, but you could use one from a jar too)
1 fresh tomato, cubed
2 gloves garlic, sliced
5 leaves of fresh basil, shredded
2 handfuls of fresh spinach, roughly torn
few drops of oil or water for sauteeing
2 whole wheat tortillas, warmed in the micro or over an open stove flame
Instructions: Saute everything in the pan just to warm and then plop into the two warmed waiting tortillas and roll up. Serve with avocado if desired.
