On with the Fusion Confusion!
Seitan Teriyaki Fajitas were a strange conglomeration of ingredients I had on hand which turned into the best lunch of the month!
Seitan Teriyaki Fajitas
1 package Seitan Cubes in Teriyaki sauce (Teva Deli Brand, Israelis)
1 roasted red pepper (I had one I had already flamed-roasted and peeled, but you could use one from a jar too)
1 fresh tomato, cubed
2 gloves garlic, sliced
5 leaves of fresh basil, shredded
2 handfuls of fresh spinach, roughly torn
few drops of oil or water for sauteeing
2 whole wheat tortillas, warmed in the micro or over an open stove flame
Instructions: Saute everything in the pan just to warm and then plop into the two warmed waiting tortillas and roll up. Serve with avocado if desired.
Thanks to all who responded about the Veg Potluck Group. I just need to move forward with it. I’ll of course let you all know when I do!
Finally, I posted this video on my Facebook page, but wanted to share it here because not all of you are with me over on Facebook. I am so moved and inspired by this video. I think you will be too. Please take a few minutes to watch it and tell me how it impacts you:Pin It
