Purple Toed Vacation

I’m fairly certain that Marketing 101 says “Keep pictures of your gnarly, ruined feet OFF the internet!” But I’m a rebel, ya?

I PROMISE you that will be the last one!  Just wanted to show you where I’m at, because frankly my family isn’t exactly oozing sympathy anymore.

OK, I’m done with the pity party.  But did I mention how much it hurts??  OK, OK, but are you feeling bad for me yet, because that is definitely what I am fishing for here…

Anyway, it seems like every time I get in a groove of writing, blogging, seeing clients, a Jewish holiday happens and throws me off track completely.  This time it was Passover and I was the designated seder host:

We decided on a Stay-cation this year and pledged to spend every day that was not a holy day, out and about, climbing the land.  We hiked every day!  Yes, with that toe.  Yes, I whined so much that everyone left me behind.

This is the breathtaking memorial for the 44 people who lost their lives in Israel’s deadliest forest fire on Mount Carmel in 2010.

At the end of all the exhausted climbing, we felt like we had walked all the way back to prehistoric times!

I have to say that as the first time we have ever taken a hiking holiday when I am NOT training for some future race, how crazily liberated I felt!  I didn’t have to worry about my knees, or about twisting an ankle and having months of training ruined.  I feel like I have my life back!  Well, in 6 months when I have normal toenails again, I imagine I will feel like I have my life back, but this was pretty close.

Clearly, it was time for me to move on from that hobby and so far I am really glad I did!

Alas, the holiday ended and the back-up of waiting clients began.  Now somehow it is Shabbat again?!  Next week starts off with a very exciting Sugar Blues workshop I’ll be leading for a private group in Efrat on Sunday!  After that is done, I pledge to be back to a regular schedule of writing.  I have so much amazing information to share!  Stay tuned…

While I felt that The 30-Day Vegan Challenge, was probably best for a new vegan just learning the ropes, I did listen to every single day’s material and even learned a few new things, such as the trick to making the tastiest tempeh and how to make fluffy vegan biscuits (which I will eagerly save until Israel gets healthy vegan margarine!  Speaking of which, I did find the grocery store tour a little depressing.  American vegans, you have some seriously amazing choice of food products!)

Vegan Passover

When we last left our hero Joseph, he was reunited with father Jacob and welcoming his brothers to come settle in Egypt.  Fast forward some 500 years and things have taken a turn for the worse. Thankfully, the Israelites escape their lives of bitter bondage and in memoriam we clean under our sofa cushions.

OK, so I wasn’t going to write about Vegan Passover because it’s a complicated subject and I am no rabbinic authority.  But many of you sent me questions and requests, so I will try.

I have a lot of non-Jewish readers and I am sorry but I just don’t have the time to explain everything.  Feel free to skip this post or just check out the links that follow:

SO, if you do not eat kitniyot and you want to stay vegan on Passover, you will be able to eat fruits, most vegetables, quinoa, and nuts.  It’s only 7 days, you won’t become protein deficient or die of starvation or anything.  But you won’t be able to cook that much fancy food or enjoy much of what is on the family table.  At least you’ll probably get through Pesach without gaining the weight everyone else gains!

Me personally?  I’m planning on eating kitniyot.  I was already not fully on board with this kitniyot business since we made aliyah, but now that I am eating as vegan as I can, I’m not giving up my legumes.  

However, where it gets complicated is that I am making seder for 14 family members who probably don’t eat kitniyot.  That means that our seder won’t be vegan.  I don’t have the slightest clue how to make kneidelach or mock chopped liver without using kitniyot (actually, see below for a slight clue).   Therefore I don’t have many pre-tested vegan Passover recipes to share with those of you who are hosting vegan or vegetarian seders.

Welcome 2012 or, I think I’m gonna puke

Happy New Year 2012!!!

So yeah, I did it.  I registered for the Tel Aviv Marathon.  All 42.2km of it.

That’s 26.2 miles just to be entirely clear.  Every time I actually think about that distance, I feel like I’m going to be sick.  Then I get excited too.  Isn’t there a saying about something like “If your goals don’t make you a bit nauseous, then they are not big enough.” ?  Well, if not I just created one.  This goal is definitely big enough!

You can even go and see my name in the list of registered racers, right between Asi Segal and Micki Segal.

I have another post in the wings about where I am with my training (18km and chafing in all sorts of interesting places), but today I wanted to write about something different:  PRESENTS!!!

5772 here we go!

This past weekend, we Jews celebrated the New Year of 5772.  Gosh, we’re old.  I’ve got to tell you, I have a good feeling about this year.  Big things are going to happen and maybe, just maybe, I am finally mature enough to handle them.  I’m optimistic.

Anyway, October 1st is significant in a few other ways:

1.  We are ending DST tonight!  WooHoo!  I dislike DST.  I grew up in a state that never adopted it and it just never made sense to me.  I’m an Early-to-Bed-Early-to-Rise sort, so it suits me perfectly to have the sun come up early so I can get out and start my day.  I’m pretty stoked for a 5:30am run tomorrow morning!

 

2.  vegan mofo

Vegan MoFo (Vegan Month of Food) starts today!  I participated last year in this vegan cooking/blogging event and petered out after about 2 weeks.  This time, my goal is to post 5 vegan-related posts a week for all 4 weeks.  Can I do it?  Watch and see!  I have assembled the recipes I want to try and tonight will be plugging them into my calendar and making shopping lists.

Here’s the biggie:  Marathon training officially begins!  I was planning to start in September, but I got injured and had to wait.  My marathon is now 6 months away and it’s time to get it in gear.  Yikes!  That’s physical training, getting enough sleep (thanks again to the time change!), stress management and of course, nutrition.  If you see me posting about (or eating) sweets and sugar, slap my hand away please.   There’s no time or room for crap now!  Hopefully some of my posts for Vegan MoFo and beyond, will be about the Vegan Athletic Kitchen as well.

So, to kick things off for Vegan MoFo, I’m sharing a recipe we enjoyed over the holiday weekend.  You will also notice that I’m trying a new recipe plugin that will allow you to print my recipes more easily.  I hope.  Let me know how it works for you.

Moroccan Vegetable Couscous

Moroccan Vegetable Couscous

This is the vegetarian version of traditional Moroccan couscous with vegetables. To ensure fluffy couscous, follow package directions and when couscous is cool enough to handle, use your hands to fluff and separate each grain. This extra effort is really worth it!

Ingredients

  • 1/2 kg (1 lb) instant whole wheat couscous
  • 1 Tbsp oil
  • 2 onions, quartered
  • 4 carrots, peeled and cut into large chunks
  • 200 g (7 oz) pumpkin, cut into large chunks
  • 2 large zucchini, cut into large chunks
  • 4 stalks of celery, sliced thickly
  • 1-2 cups green cabbage, coarsely chopped
  • 1 can chickpeas, rinsed and drained
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 large pinch of saffron
  • 1 tsp turmeric
  • salt and pepper to taste
  • 8 cups of water or vegetable broth

Instructions

  1. Prepare couscous according to package instructions. Set aside.
  2. Heat oil in a large pot. Add onions and saute for a few minutes.
  3. Add remaining vegetables and saute for another 5-10 minutes.
  4. Add chickpeas and seasonings.
  5. Add water or broth and bring to a boil.
  6. Reduce heat to low, cover and simmer 20 minutes or until the veggies are tender. (Check frequently and add more water if necessary. Final consistency should be soupy).
  7. To serve, spread couscous on serving tray and top with veggies and soup.

Vegan Jewish Holiday Cooking is Here!

As you can see, I have been a busy little cooking bee!  I created this little e-book, available for immediate download and am selling it right HERE.  I priced it low, just $10 USD (36 nis), because I want to get it into as many hands as I can.  These are really delicious recipes and even complicated-sounding things like stuffed cabbage or apple pie, I totally simplified and idiot-proofed (not that any of you are idiots of course!).  I also listed instructions for cooking ahead and storing as most of us can’t pull off this entire holiday season without advanced planning.

My recipes use no bizarre or hard-to-find ingredients and there are instructions and substitutions listed for readers who live and shop both in Israel and abroad.  All the measurements are in metric AND US Standard.  You’re welcome.

All the recipes are parve, so even if you are serving a traditional meat meal, you can incorporate some of these in as side dishes or desserts.

Also great if you have vegetarians/vegans in the family, or vegetarian/vegan guests!

How wonderful to have no cholesterol, healthier and delicious foods to share with your loved ones this holiday season!

Recipes are great for Rosh HaShanah of course, but will also be perfect for meals in the Sukkah, or frankly all year round.  I, for one, have been sworn by my husband into a promise to make him the apple pie every week for the rest of his life.  It’s that good.

Same husband, a notorious tofu-fearer, gobbled up the stuffed cabbage and said “This is way better than the kind you used to make with meat.”  Seriously.

And my kids want to tell you that the blondies and the kugel are their #1 and #2.

Vegan Jewish Holiday Cookbook Coming Soon!

Don’t panic, we’ve still got 2 weeks!

I have been working on a little Jewish Holiday project:  a Vegan Cookbook for the High Holidays and beyond!

First step was to think up some possible recipes.  This is what I’ve got so far.  These are either traditional Holiday foods or dishes incorporating the simanim (the symbolic foods we eat to bring abundance, prosperity, fertility, and protection from enemies):
